It comes out great and you can change it around as you like but try the pumpkin - NOT the spiced pumpkin pie stuff! Look for Just regular pumpkin. It thickens the chili and adds a creamy texture. I know it sounds weird but it is great.
UPDATE: I made this for the Super Bowl 2 12 23 and used New Mexico Chili powder. It added a deep rich flavor with coffee and coca notes. I really liked it!
