1. Stop washing your meat
Dry it off!
2. Avoid over-seasoning
salt and pepper might be all you need
3. Let your coals get hot enough
wait until they are all coated in white
4. Don't crowd your pan and avoid flipping your meat too soon
Leave some space and let it cook
5. Give it time to rest
Just like a steak or roast no matter what you cooked let it rest when you are done
